Fish In Pineapple and Sour Sauce Recipe

Ingredients:

1.5 lb cod or mackerel fillets

7 tbsp lemon juice

Salt

5 tbsp cooking oil

2 cups water

3 tbsp ginger, grated

5 chilies, pounded with a bit of salt

18 shallots, pounded

1/2 tsp laos powder (galangal)

2 salam leaves

1/2 pineapple cut into strips

10 red chilies, cut into half

 

Method:

Clean the fish and cut into 1.5" pieces. Dry well. Marinate the fish with lemon juice and 1/2 tsp salt for 15 minutes. Heat the oil in a frying pan. Fry the fish until brown. Drain on  kitchen paper. Bring water to the boil. Add 1 tsp salt, ginger, laos powder, salam leaves, pounded chilies and shallots. Then add pineapple strips and red chilies. Simmer for 10 minutes. Remove the salam leaves. Add the remaining lemon juice and boil for 2 minutes. Remove the pan from the heat. Put the pieces of fish in a bowl and pour the sauce over. The fish should be just covered by the sauce. Cover the bowl and chill for 10 hours. Serve cold or reheat before serving.
