Foil Wrapped Chili Mackerel Recipe


5 small mackerel (cleaned, heads removed)

2 tbsp lemon juice

1 tbsp salt

2 cloves garlic (crushed)

3 tsp brown sugar

2 tsp chili paste

2 tbsp Indonesian salty soy sauce (light soy sauce)

1/2 ginger root (ground)

2 tbsp groundnut oil


Rinse the cleaned fish inside and outside. Dry with kitchen paper. Put the lemon juice in a bowl and mix in the salt. Stir until the salt has dissolved. Coat the fish with mixture on the inside as well as outside. Leave to stand for 30 minutes. Mix the garlic with sugar, chili paste, soy sauce and ground ginger. Spread out five pieces of aluminum foil and grease them with a little groundnut oil. Heat up oven to 250 degrees Celsius. Use kitchen paper to dry the fish again then coat with the soy sauce mixture. Place the fish on the aluminum foil, fold it and secure with a wooden cocktail picks. Put the wrapped mackerels into the oven. Turn the wrapped fish after 10 minutes and cook for another 10 minutes. Serve.l
