Fried Fish In Light Sour Soy Sauce Recipe

Ingredients:

1.5lb white fish fillets

3 tbsp lime juice

salt to taste

pepper to taste

4 tbsp sifted flour

3 beaten eggs

2 tbsp sugar

1.5 cups white vinegar

5 tbsp light soy sauce

2 tsp ground ginger

1 tbsp finely chopped pine kernels

4 spring onions

oil for cooking

Method:

Wash the fish and dry with kitchen paper. Cut it into 12 equal pieces. Rub the lime juice over the fish on all sides and leave for 15 minutes. Dry them again with kitchen paper and rub the pieces of fish with equal amount of salt and pepper. Roll them in the flour and shake off any excess. Heat up oil in pan until very hot. Dip the pieces of fish in the beaten and fry them for about 5 minutes until golden brown. Bring 1/4 cup of water to the boil. Dissolve the sugar in the boiling water and add the vinegar. Stir well. Remove pan from heat and add the remaining ingredients. Stir the sauce vigorously. Spoon the lukewarm sauce on to warmed plates and place the pieces of fish in the center. Garnish with thin strips of spring onions and serve.
