Stuffed Chili Grilled Fish Recipe

Ingredients:

1 kg snapper

4 tsp lime juice

1 tsp salt

1 tsp pepper

5 tbsp oil

3 tbsp tamarind pulp mix with 1 cup water

oil for brushing fish

 

Pounded Ingredients

9 fresh chilies

5 cloves garlic

15 shallots

2 cm ginger

2 cm fresh turmeric

1 tomato

1 tbsp coriander seeds

8 candlenuts

1 tsp dried shrimp paste

2 basil leaves

2 lemon grass

 

Method:

Clean and drain the fish well. Make a few deep cuts on both sides of the fish. Marinate with lime juice, salt and pepper for 20 minutes. Heat oil in pan. Stir-fry the pounded ingredients until fragrant. Add in tamarind juice. Stir-fry until the chili paste thicken. Fill the inside of the fish with the chili paste. Brush oil on both side. Grill over medium heat until cooked. Serve
