Curry Cucumber Pickles Recipe


6 medium cucumbers

4 onions

4 green or red peppers

1/2 cup salt

3.5 cups white vinegar

2 cups sugar

3 tsp curry powder

1 tsp celery seeds

1 tsp mustard seeds



Wash cucumber and cut into 1/2 cm slices. Peel and slice onions, cut pepper into 1 cm pieces. Put all vegetables in a plastic bowl. Sprinkle with salt and pour water over to cover vegetables. Stand for 6 hours. Drained well. Combine vinegar, sugar, curry powder, celery seeds and mustard seeds in an earthenware. Stir over low heat until sugar is dissolved. Bring to boil. Add drained vegetables and bring to boil again for 5 minutes. Cool and pour into sterilized jars. Seal.
