Egg Plant Shrimp Curry Recipe


500 g egg plants

300g shrimps

1 cup of coconut milk

3 tbsp of curry powder

4 onions (sliced)

2 cloves of garlic (chopped)

salt to taste

chili powder to taste

1 sprig curry leaves

1 tsp turmeric powder

cooking oil


Add salt and turmeric to diced egg plants. Heat cooking oil in pan and fry egg plants till brown. Remove from pan. Clean shrimps and add salt and a pinch of turmeric powder to it. Then fry them until they become brown and crisp. Remove from pan. Mix salt, curry powder, chili powder and tamarind juice to the coconut milk. Heat oil in pan and fry the onions, garlic and curry leaves till golden and fragrant. Put in fried egg plants and prawns. Add coconut milk mixture and allow it to simmer till the gravy thickens and  oil comes to the top. Serve.
