Ladies Fingers With Shrimp Curry Recipe


600g small prawns (shelled)

2 egg plants (cut into 8 pieces each)

5 ladies fingers (cut into 4 cm lengths)

3 onions (chopped)

3 cloves garlic (crushed)

3 cm piece ginger (chopped)

6 red chilies

1 tsp turmeric powder

1 tsp ground fennel

3 tbsp oil

2 tsp chili powder

salt to taste

2 cups coconut milk


Heat up oil in a saucepan and fry onions until brown. Grind garlic, ginger and chilies together. Add it into the saucepan and fry for a few minutes. Stir in the coriander, chili powder, fennel and turmeric. Fry, stirring constantly until oil separates Add egg plants, ladies fingers, salt and coconut milk. Bring to the boil and reduce heat. Add shrimps and simmer till gravy thickens. Serve.
