Mixed Vegetables Curry Recipe


4 tbsp cooking oil

1 tsp mustard seeds

2 tsp turmeric powder

1 tbsp coriander (ground)

2 cloves garlic (finely chopped)

1 small piece ginger (finely chopped)

2 big onions (cut into wedges)

150 ml coconut milk

400 ml boiled water

2 pieces dry tamarind

salt to taste

Cut the following into pieces:

10 dried chilies

3 green chilies

3 red chilies

2 egg plants

1 carrot (medium size)

6 strands long beans

1 green pepper

6 lady's fingers


Heat 4 tbsp of cooking oil in a deep pot. Brown the mustards seeds, ginger, garlic and dried chilies. Then put in the green and red chilies. Add in turmeric powder and ground coriander. Add the cut vegetables and mix with the spices. Add coconut milk, water and dry tamarind. Then stir. Add salt to taste. Cover and simmer for 20 minutes or until vegetables are tender. If too dry, add water. Serve.
