Spicy Dry Chicken Recipe


1 large whole chicken

5 large onions (finely sliced)

3cm piece young ginger (sliced finely)

3 tbsp chili powder

2 cm cinnamon stick

2 stalks spring onions (chopped)

5 tbsp cooking oil

salt to taste

Juice of 1 lime


Heat up oil in a wok using high heat. Put in cinnamon stick, ginger and the onions and fry till golden brown. Add the chicken pieces and salt. Fry till brown. Add chili powder, fry over high heat, stirring gently. Using medium heat, cover and simmer till chicken is tender and liquid dries. Add lime juice and the spring onions. Stir quickly before dishing out.
