Spicy Fish Roast Recipe


1 whole grouper (about1.5 lb)

6 screw pine leaves

2 tbsp corn flour

1 cup oil

1 stalk lemon grass (ground)

4 cloves garlic (ground)

2 onions (ground)

1 tbsp candlenuts (ground)

1 tbsp chili (ground)

3 tsp lemon juice


Clean and wash the fish. Rub it with salt all over and wrap it in screw pine leaves. Steam it for 10 minutes over boiling water. Mix the corn flour with a little to form a paste. Remove the fish from the leaves and rub the corn flour paste all over it. Using medium heat, fry the ground ingredients, and salt to taste, for 10 minutes. Place steamed fish in a casserole and pour the fried ingredients over it. Bake it in a moderately hot oven for 30 minutes until the fish is brown. Put it under a grill for 5 minutes to make it crispy. Sprinkle with lemon juice and serve.
