Spicy Vegetable Stew Recipe


4 large potatoes (halved the potatoes)

4 carrots (scraped, washed and sliced)

250g cabbage (use cabbage leaves)

2 large onions (sliced into rings)

2 stalks spring onions (chopped into 2cm pieces)

3 fresh red chilies (sliced into half and seeded)

2 green chilies (left whole)

3 cm piece fresh ginger (sliced finely)

4 cloves garlic (chopped)

3 cm piece cinnamon

4 cloves

1sp peppercorns

5 cardamoms

bay leaves

salt to taste


Heat oil in a deep and large pan. Put in cinnamon, cloves, cardamom and peppercorn. When crackling, toss on chopped garlic. Fry till garlic turns brown. Add carrots, potatoes and onions. Fry for 2 minutes. Pour in stock and water to cover vegetables and simmer till vegetables are almost done. Add cabbage, spring onions, chilies and pepper and salt to taste. Simmer till vegetables are cooked.
