Bamboo Shoots With Ground Pork Recipe

Ingredients:

500g canned or boiled bamboo shoots

350g ground pork

2.5 cm square fresh ginger root sliced into strips

1.5 tbsp vegetable oil

Simmering Sauce:

2 cups of dashi stock (refer How To Prepare Dashi Stock)

3 tbsp mirin (sweet cooking rice wine)

1/4 cup soy sauce

1 tbsp sugar

Method:

Cut bamboo shoots into bite sized pieces, rolling wedges. Heat oil in pan using high heat. Add sauté and ginger until light brown. Add ground pork and cook using moderate heat. In a medium sauce pan bring simmering sauce to boil then add cooked pork. Bring to the boil, skim scum. Add bamboo shoots and simmer over low heat until most of the liquid is gone. Serve.
