Egg Plant In Fermented Soy Bean Sauce Recipe

Ingredients:

1 large egg plant (cut into pieces of about 3 inch length)

6 straw mushrooms (chopped)

1.5 tbsp fermented soy beans

2 red spur chilies (sliced lengthwise)

1 cup sweet basil leaves

1 tsp sugar

1 tbsp light soy sauce

1 tbsp vegetable oil

Method:

Put 1/2 tsp of sugar and 1/2 tsp of the oil with 2 cups of water and boil the egg plant in it. When it is done, remove egg plant from water and arrange on a plate. Sprinkle with the basil leaves, chili slices and put aside.

Heat up oil in pan to stir fry the mushrooms and fermented soy beans. Season with the soy sauce and sugar. Stir and mix thoroughly. When done dip out over the egg plant.
